Cheesy Poblano Rice

    *Made for the January Rice & Pasta Recipe Challenge*

    Sharebear has the best recipes! This is probably one of my FAVORITE rice recipes I've made so far. I didn't use the instant rice, so I had to change up the cooking process some. I sauteed the poblano and garlic then added the rice (a little over 1 cup) and toasted it for a few minutes. Poured in the chicken broth (a little over 2 cups) and simmered, covered, until soft, add more chicken stock if it needs it. Then I added milk (no cream in the house!) and the cheese and it was OH SOOO GOOD!!! Wish I had time to make this pretty for the picture, but I didn't so just took a quick pic. of it in the pan. This will be made often in my house, got huge raves!

    I don't like instant or parboiled rice so I'd follow your instructions using regular rice and the chicken stock too. :)

    I don't ever use instant rice either and haven't in probably 10+ years so not even really sure how the taste/texture is. This way worked great :)
