Chicken, Sausage, Onions and Peppers

    Grilled Chicken Sausage Onions And Peppers Over Linguine by Frankieanne

    I came across this recipe by chance recently, and loved the idea of pasta with pesto and the grilled chicken, sausage, onions and peppers.
    Hubby dragged out the grill from winter storage, gave it a good clean and had it warming up but then we ran out of propane! (thinking we filled it up at the end of the summer) No biggy I thought, I'll just roast everything instead.
    I have a ton of different pasta's in my pantry but no linguine, I contemplated spaghetti, rigatoni and penne and settled on penne. I like the idea of one bite pasta with the chunks of meat and veggies. My jar of pesto sauce was almost 8oz, and I wasn't sure I would want to use 7oz's of sauce, so I measured out a heaping 1/2 cup of pesto and found that plenty enough for my tastes. I like to add a bit of the cooking water to pasta with pesto sauce to help emulsify it; so I always save a measuring cup full of the hot cooking water and eyeball the consistency.
    I roasted the chicken thighs, sausages, onions and bell peppers at 400F for approx. 25 minutes. I tossed it in Olive oil and added a bit of black pepper as well as the salt called for. Next time I would love to add some cloves of garlic, but I don't think that would work in a grill basket, so perhaps some garlic powder in that case. The peppers gave off a fair bit of moisture so I didn't get that nice char as you would on the grill, but it was still very delicious!! I have one of the caged grill baskets with a handle that you can flip and one of the square open baskets that you can stir veggies in, so I look forward to trying this on the grill soon! (you'll need two grill baskets unless you skewer the veg instead)
    For the 4 of us it made quite a bit-- giving us large portions plus extra for the big eaters-- and we actually had a portion of leftovers which was nice. A great recipe to serve to guests at an outdoor party but easy enough to half the recipe for 2-4 people.
    (For the picture I just placed a few pieces of everything on a plate instead of putting it all on a large platter as suggested)

    Thanks Diz! Right!! Hubby and I had a whole ten minute conversation before cooking about whether we filled or not, lol....It's filled now and we grilled burgers last-night. We usually keep those mini propane bottles on hand in case this happens, but we used up our emergency stash. ;)

    Yummy photo Shona! Oh-No on running out of propane. We bought one of those gauges (inexpensive, about $12) that hooks up between the tank and grill and tells us how much propane we have. We too have ran out in the middle of cooking. The recipe looks great!
