Chicken Cacciatore

    I'm not sure if I've ever made Chicken Cacciatore before, I can't remember! This was delicious :) I used bone-in skinless chicken thighs, so I simmered them a little longer, probably about and hour. Also I could not find the strained tomatoes so I used pureed. Everything worked out beautifully, the sauce simmered down nice and thick. Did not use the optional mushrooms or olives just because of the picky family, but they would have been a great addition. Served over spaghetti noodles and topped with some parmesan cheese :) Thanks Bren!! Sorry not the prettiest picture, but it's all I could get with 3 hungry people waiting on food lol.
