Chicken Cacciatore

- 3 boneless, skinless chicken breasts, cut in half shopping list
- 2 20 ounce bottles of strained tomatoes shopping list
- 1 med. onion, finely chopped shopping list
- 2 cloves of garlic, finely chopped or micro planed shopping list
- 1/4 tsp pepper shopping list
- 1/2 tsp salt shopping list
- olive oil shopping list
- 1 bay leaf shopping list
- 1 tsp oregano shopping list
- 1 tsp basil shopping list
- 1 tsp parsley shopping list
- 1/4 cup sliced pitted ripe olives, optional shopping list
- 1 cup sliced mushrooms, optional shopping list
- Splash of red wine shopping list
- 1/2 cup flour shopping list
How to make it
- Place flour in a shallow dish, add salt and pepper.
- Place metal frying pan on med. high heat and add enough oil to cover the bottom of the pan.
- Dredge the chicken through the flour and shake off excess.
- Place chicken, in the hot oil slowly. You don't want the temp of the oil to drop.
- Cook the chicken until well browned, about 5 minutes per side.
- Remove to a warm dish and set aside.
- Add the onion and cook until translucent, add the garlic until fragrant.
- Add the sauce and scrape any bits off of the bottom of the pan.
- Add the basil, oregano , parsley and bay leaf.
- If adding the olives and mushrooms add now.
- Add a splash of wine.
- Bring to a gentle boil and add the chicken.
- Turn the chicken to coat.
- Decrease the heat to a slow simmer, cover and cook for an additional 30 minutes.
- Note:I always make this with bone skinless because I try to cut the fat where possible but it could certainly be made any cut of chicken. It's actually better with bone-in cuts.

Delicious! A very easy recipe to put together. Cooking time was spot on,and very flavorful. I used chicken broth in place of the red wine and i forgot to add the olives, but it turned out great.

Wow what a fantastic recipe. Used 4 boneless chicken legs and 2 large boneless breasts which I had cut in half. Simmered for several hours and the house smelled wonderful. Thank you Bren for such a great recipe.
