Chinese Smacked Cucumber Salad

I was intrigued by this "Chinese Smacked Cucumber Salad" recipe as I have a strong interest in international cuisine. It was very delicious! I used my stick blender to make the sauce smooth (no lumpy pieces of garlic) and my chili-pepper grinder to "pepper" the cucumber pieces. If I were to make this again, I would cut the ends of the cucumber as well as the pieces on an angle for a nicer presentation. Thank you Resc for sharing your recipe!

LOL! My husband wouldn't eat the dipping sauce because he did not like the strong vinegar taste. I now know the reason he always hands me his bowl of dipping sauce at the Vietnamese restaurant. I can drink this stuff! I put the leftover on a shelf in the kitchen to "drink" later but forgot about it. My whole kitchen smells like a Chinese restaurant this morning! Anyways, I am thinking this is an interesting version of "Veggies and Dip" for those who would eat it. I loved it! :)
