*Made for the January 2021 "Healthy" Recipe Challenge*

This was EXACTLY the kind of thing I was looking for to use up some leftover chicken! That sour cream chipotle dressing is amazing! I honestly think that I probably doubled up on the chipotle :) We didn't even miss the cheese!

Thank you Shona! I finally got new dishes after the same old ones that I had for 15+ years lol.

I think chipotle powder would work just fine! You may need to add a little extra lime juice or maybe something else just because you lose the the sauce from the canned and it might be thick. Let us know if you try it!
