Chocolate Chia Pudding

    *Made for the May 2019 "Tropical" Recipe Challenge*

    This pudding set up beautifully, exactly the consistency I was looking for :) I made it yesterday to have it for today since it needs to be in the fridge for 8 hours to overnight. I think for flavor, this had a nice chocolaty flavor, but could have used a little oomph. Especially with it not being very sweet. I liked the subtle sweetness, but could have used some extra flavors, like cinnamon or more vanilla? And if you have a sweet tooth, add more maple syrup (used pure). I did not transfer the pudding to a jar before refrigerating, I just left it in the bowl I mixed it in and covered with plastic wrap and in it went!

    Great photo Michelle! I love chocolate chia puddings and haven't made one in some time. I must do something about that soon. LOL! Drizzle with a little chocolate syrup if you need 'more'. I recently made a chocolate syrup using maple syrup that is great.

    I use to be quite the Chia seed aficionado, but it starting upsetting my sons stomach so I stopped buying it. I like that the pudding has coconut milk and maple syrup! The chia seeds have no flavour so the pudding really needs to have a big amp of flavour, perhaps a sweetened coconut milk would have more flavour, or maybe a vanilla flavoured almond milk? I like Linda's chocolate syrup idea, yum!

    Thanks Shona :) I like the idea of the vanilla almond milk, wonder if it would still set up like pudding since it's quite a bit thinner than coconut milk? I will definitely play around with this recipe some, because it's great to have on hand for quick breakfasts for myself.
