How to make it

  • Whisk coconut milk, vanilla, cocoa powder, salt, and maple syrup in a bowl. Gently fold in the chia seeds. Transfer to a large jar. Allow to rest for 5 minutes. Alternate gently rotating jar (30 seconds) and resting (4 minutes) for another 20 minutes.
  • Refrigerate jar for 8 hours to overnight.
  • To serve, put pudding in bowl, add large drizzle of coconut milk, and top (if we MUST) with whipped cream, then shredded coconut.
