Cinnamon Tea Cakes

    *made for the December 2020 'Holiday/Festive' Recipe Challenge*

    I was looking for something different I could add to my Christmas desserts this year and found these! They are fun and really easy to make, the dough is very workable and rolls up perfectly into little balls. They do flatten slightly on the bottom while baking so they come out not as round. I felt them after 15 mins and there was no browning and they still seemed a little doughy, so I cooked them a few minutes more and took them out. After rolling in the cinnamon/sugar mixture I immediately taste tested of course :) They were kind of dry but that could have been from me baking them a touch longer, so that was probably my fault. I am going to give them a try again and pull them out right at the 15 min. mark. I don't want to give these stars yet because I'm still unsure if the dryness was my fault or if it's just a dry dough no matter what. Great flavor and we are still going to enjoy them :-)

    How neat! It's just like a Russian tea cake but rolled in cinnamon sugar instead of powdered sugar. The cookies should carry-over cook for 5 minutes when out of the oven, so perhaps baking less next time will work out better? I'm sure the cookies will soften a little more if you put them in an air tight container on the counter for a day or two. Like Shortbread cookies and Joce's Pecan Puff's they get better with age! :)
    I love the idea of cinnamon sugar on these, bookmarking to try! :)

    I knew I had baked them too long Shona, darn! I put them in a container and we are going to give them a try later today and see if they have "softened" up. Thanks ladies :)

    Hopefully it softens up for you! If not, it would be a good dunking cookie with Hot Chocolate, or some festive Eggnog. :D

    Pretty and festive picture Michelle! I've never had luck baking this type of cookie but then again I only tried 2x. Mine flattened so much they were like discs. You could always crush them and use them for an ice cream topping if they don't soften up to your liking.
