Coconut Banana Bread w Key Lime Gaze

    Coconut Banana Bread With Key Lime Glaze by ChoclytCandy

    This is a conflicting recipe! On the one hand, the loaf itself is excellent, a great moist texture with a wonderful coconut-banana flavour. However the key lime glaze with coconut didn't have much of a taste and I don't think it lent anything to this recipe. Perhaps adding some zest to the glaze and/or the loaf would have added more lime flavour.
    It calls for 3 Tablespoons of dark rum, but I used 1 tsp of rum extract plus pineapple juice to make up for the 3 T's. I didn't taste any rum so perhaps I should have upped that to 1-1/2 or 2 tsp's of extract. But the loaf still tasted great without the rum flavour. Maybe instead of a lime glaze it would have been better with a rum flavoured glaze? But on it's own it's a wonderful loaf, so I don't think it needs a glaze at all. :)

    Such yummy looking photos, Cosmicmother! This sounds really good! Not sure about the rum. I'm not a big rum flavored person. Did you notice the submitter said she subbed sour cream for the rum? I thought that was a weird exchange. Too bad the lime glaze didn't have any flavor. I think it would be good if the lime glaze had a real "zing." Also good to know that it really doesn't need a glaze.

    It's a great loaf without the rum flavour and lime glaze though! Too bad the recipe wasn't listed as just a coconut-banana loaf, it would have been 5 stars for sure. :)

    The picture is lovely and delicious looking Shona. I too agree the loaf would be just wonderful on it's own. Maybe because I'm not a fan of a lime glaze. I would though not have a problem slathering a slice up with some cream cheese. LOL!

    Thanks Michelle! :) The other bread I made, the Hawaiian Tea bread, was great too and I thought some lime or rum flavoring would be good in it-- but after trying this recipe I don't think either bread needs it, lol ;)
