Country Ribs and Kraut

    The use of hot sauce is a bit different than traditional pork and sauerkraut. The sauerkraut is super sweet with all of the added sugar. I used more sauerkraut than stated in the recipe (48 oz) and only 1/2c. of sugar. It’s was overwhelmingly sweet. Probably should have used 1/4c. I didn’t really understand what to do with the 2 cans of chicken broth. The recipe doesn’t say to add it. It only says to baste the ribs with it. Seems like a lot of broth for basting purposes. Every time I checked the ribs, they were swimming in their own juices. I didn’t even use the broth. I baked these in a covered Dutch oven. I only had 4lbs of bone in country ribs. Surprisingly, my hot sauce loving hubby didn’t care for it. I think it had more to do with the sugar than anything. I never add sugar to my sauerkraut. I can’t handle hot sauce so I didn’t put any on my share of the ribs. However, I didn’t mind the hot sauce that leached into the sauerkraut. The sauerkraut was so sweet that I barely noticed.

    That's too bad it turned out so sweet! My hubby loves sauerkraut but it's not my thing, I might like it sweet though? But probably not as sweet as this sounds! Hopefully the pork chops were still salvageable?

    Ugh on how sweet this ended up being Diz :( I love sauerkraut but hardly ever make it because my family hates it lol. Gorgeous picture!

    Hi, Cosmicmother! You should give sauerkraut a try with added sugar. It really mellows it out and takes away the tartness. I don't mind a sweeter sauerkraut. I've always "slow" cooked it with a pork roast or a duck and the juice from the meat mellows it.

    Thank you, Mommyluvs2cook! The majority of sauerkraut recipes I've seen typically call for some added sugar or sliced apples. Your family might actually like it if it was sweet. It's a lot different. I grew up eating sauerkraut and mom never added sugar. The only thing she put in it was garlic, onions, and caraway seeds.
