Country Vegetable Soup

    Country Vegetable Soup by Upstatevoyager

    This is a great, simple, clean tasting soup. Very reminiscent of a minestrone type soup. I like that it uses vegetable broth, which is where most of the flavour comes from. So, depending on the vegetable broth brand you use, or flavor of your home-made broth, you may want to use some extra herbs or seasonings. I used Campbell's brand veggie broth because it's my favorite, it's full of bright veggie flavours and seasoned well. But even with that, I would like to add some bay leaves next time, and maybe some thyme sprigs; or use a can of diced tomatoes with Italian seasonings in it, just to bump up the flavour a bit more.
    I didn't have the frozen green beans, so I was going to use peas instead. But I completely forgot to add them! We didn't miss them though, it's full of carrots, cabbage and zucchini....and of course the ditalini pasta. The whole family liked it and went for seconds. I served it with homemade rolls and topped the soup with a little pecorino-romano cheese.
    I doubled the recipe which is why my pot is very full in the photo! ;)
