Cranberry Orange Dark Chocolate Cookies

    Cranberry Orange Dark Chocolate Chip Cookies by Girlieerin

    These were delicious! They have a light hint of orange from the zest, that compliments the chocolate and cranberry perfectly. I could see how adding some vanilla would give some more depth of flavor, so I would like to add some next time. A complimentary spice like cinnamon or nutmeg could also be a nice change up once in awhile too.
    The only thing I did differently was cut the salt in half. These cookies have a lot of baking powder in them, which is high in sodium already (you know, that baking-powder-biscuit taste that makes them scrumptiously savory) and I'm glad I did as you could definitely taste the salt. I also used salted butter, so perhaps it would be ok if you used unsalted butter, though the recipe doesn't specify either.
    Because of how the dough comes together, you could easily form the dough into two logs, chill, and slice them into cookies. This also makes it easier to freeze part of the dough and save for later. Or pinch and roll the dough into balls. I used a 1.5 Tablespoon cookie scoop and got about 36 cookies.
    The cookies have a nice chewy texture, lightly crisp on the outside, but still tender. Very much much like your average chocolate chip cookie. And they don't taste that sweet. Because of that, you could get away with making an orange glaze and drizzle/pipe a little zig-zag over top (using the orange juice from the zested orange). Or even dip part of the cookies in melted chocolate. Both of which would make them more festive looking on a cookie platter. My mind races with all kinds of possibilities, adding pistachios or other nuts, similar to Kris Kringle cookies for example!
    But they really are a nice cookie just the way it is. The whole family loved them! :)

    Beautiful cookies Shona! Good call on cutting back on the salt, see, it's those kind of things I would never think to do, but somehow you catch them :) I bet they would be good served in a bowl with some ice cream if you were wanting to sweeten them up one night!

    We finished them off last night with hot chocolate, definitely a good dunking cookie. :)
