Cranberry Orange Nut Bread

    Cranberry Orange Nut Bread by Cerim

    I had some frozen cranberries and thought to make muffins or a loaf with them. And found this recipe, however there are several versions of this recipe here! Some use more or less orange juice, more sugar, more nuts etc...But, after making this recipe, I think it has a perfect balance of everything! And it's absolutely scrumptious!! The whole family loved it and devoured most of it last night.
    It's not a very sweet bread as you have the tart cranberries and tart orange juice (I used clementines). Which balances nicely with the earthy, crunchy walnuts and bright citrus from the orange zest. I could see making this a little sweeter for dessert with an orange glaze or dusted with powdered sugar. But as-is, it would make a great breakfast loaf or serve along side a cheese platter. It is also low in fat, having only 2T of oil.
    Most of the recipes for this bread call for fresh cranberries, which are much easier to chop. But since mine were frozen, I took them out when the oven was preheating, and put them in the food processor. Got the rest of the ingredients together before pulsing the cranberries a few times to chop them coarsely. They were still mostly frozen, but easier to chop that way rather than thawing and chopping by hand. I also like that you mix the cranberries and walnuts into the flour mixture first, that way you know they will be evenly dispersed throughout the bread.
    After having a slice for breakfast, I see that it softened quite a bit from the moisture in the cranberries. So, next time I will store it out of the pan, wrap it in cling film and keep it in the fridge.
    It would make a great holiday or hostess gift for friends or family. I plan on making this again for breakfast on Christmas day. :)

    My family kept telling me how good this was and asked that I make it again this weekend! Usually I have to ask them how they liked something, but when they make a point of telling me first then I know it's a winner recipe! :)

    I made this again, and added a little more orange zest. Yummy! I also let it cool completely out of the pan and stored it the fridge, wrapped in plastic wrap. I took it out of the fridge and let it come to room temp. before eating. The cranberries didn't leak out any moisture that way. But even if you left it on the counter, it is still good. Just a little more moist and soft that way. :)
