Cranberry Orange Nut Bread Recipe
This dessert bread has a good mix of tart fruits, salty nuts, and enough sugar to satisfy as a dessert or even as a simply nice light sweet snack ! My mother has the tradition of baking, serving, and gifting it to family and friends who love it!

Ingredients
  • 2 C Sifted Flour
  • 3/4 C Sugar
  • 1 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 C Cranberries
  • 1/2 C Walnuts
  • 1 tsp Grated Orange Peel
  • 1 Egg beaten
  • 3/4 C Orange Juice
  • 2 tbs Olive Oil (or Safflower)

Directions
  1. Pre-heat oven to 350 F
  2. Sift all dry ingredients (except the sugar) and place into a large mixing bowl.
  3. Add the sugar to the dry ingredients and mix well.
  4. Stir in coarsely chopped cranberries, chopped walnuts, and orange peel.
  5. Separately combine the egg, orange juice, and olive oil.
  6. Add the liquid mix to the dry ingredients, stirring slowly until moistened.
  7. Place the mixed batter into a greased 9.5 x 5 x 3" loaf pan.
  8. Bake for 50 minutes in the oven, or until done.
  9. Remove from the oven, let the bread cool before removing from the pan.
  10. When cool, it can be served immediately, refrigerated, or wrapped and frozen for future consumption.
