Cream of Chicken Soup

    This is my husband's very favourite soup recipe.
    Cream Of Chicken Soup With Mini Cheddar Chive Croutons

    I discovered it at least a couple of years ago and I'm quite perplexed that I never reviewed it before! This Cream of Chicken soup is AH-mazing!

    I have never made the Mini Cheddar and Chive croutons. Perhaps one day, but the soup itself is one that you can't help but to keep taste testing because it's almost addictive.

    If you don't have a shallot, I've subbed about an equal amount of yellow onion with a bit of minced garlic. Instead of the water and the chicken broth packets I use boxed or home made chicken broth with some Better than Bouillion to doctor up the flavour if I need to. I never bother with the heavy cream. It honestly tastes creamy without it.

    One thing I do add that is not called for in the recipe is about a cup of chopped cooked chicken.

    I've made this recipe SO MANY times. It doesn't make a ton, you will likely want to double the batch! I made 6 batches of it last year as part of my husband's birthday buffet! It freezes really well.
