Crock Pot Pork Chile Verde

    Wow, we loved this! I made a few changes, but I don't think they affected the recipe too much. I cooked this on the stove top, let it simmer away for about 2 hours, only adding a touch of chicken stock here and there when it started to cook down some. Also added corn near the end, just because lol, and it went well! Last change I made was to throw in some chicken as well, because I had one lonely leftover thigh that needed to be used. Made my own verde salsa, by roasting some tomatillos, onions and jalapenos. Added to a blender along with cilantro, lime juice, garlic powder, S&P. This ended up SO flavorful, my husband inhaled it and got seconds. Served over rice for the family but I had mine in a Paleo tortilla :)
