Cucumber - Lime salsa

  Hi, made this a couple of weeks ago before UK and once more this week -- terrific with BBQ chicken - any type. with BBQ potatoes and simple salad - complements perfectly
  No fruit with mine BUT used touch chillies in it to give touch of spice to the meal.
  Also tweaked a bit by using touch both mint and cilantro.
  As says on the tin - "light, cool, refreshing delight".

  I go back and forth with the mint and cilantro, the mint I use when it's extra spicy like Jerk Chicken.....but I'll have to try both herbs together next time--thanks!
