Cucumber Lime Salsa

- 1 medium english cucumber (approx. 1 cup to 1-1/2 cups diced) shopping list
- 1/3 cup red onion, diced shopping list
- 1 tablespoon finely chopped fresh mint (or cilantro) shopping list
- 3 tablespoons, freshly squeezed lime juice shopping list
- 1 tablespoon olive oil shopping list
- pinch of sugar shopping list
- salt and pepper to taste shopping list

- If you like a little heat in yours add some diced chilies or dried chili flakes to taste. shopping list
- Tomatoes and avocado's are nice additions as well. We like leftovers served over shredded cabbage. shopping list
How to make it
- Cut the cucumber into quarters, lengthways. Then slice the watery membrane from the center of each quarter. Cut each quarter in half again and dice.
- Combine all the ingredients in a medium bowl, cover and and chill in the fridge for at least an hour.
- If adding fresh mango, strawberry's, tomatoes or avocados add them just before serving.

Hi, made this a couple of weeks ago before UK and once more this week -- terrific with BBQ chicken - any type. with BBQ potatoes and simple salad - complements perfectly

Fantastic!! What a simple but delicious accompaniment for a spicy entrée. I used fresh mint and am happy I did. I liked it much better than cilantro which I seem to not have a 'taste' for anymore. Great recipe Cosmicmother!
