Cucumber Lime Salsa
Recipe made for IMI2's June 2019 'Fresh Herbs, Sauces, Dry Rub and Mixes' recipe challenge.
I served it with Blackened Mahi.
Blackened Seasoning For Fish Or Chicken

My review: Fantastic!! What a simple but delicious accompaniment for a spicy entrée. I used fresh mint and am happy I did. I liked it much better than cilantro which I seem to not have a 'taste' for anymore. Great recipe Cosmicmother!

Thanks Linda, I must have missed that you made this a year ago as well. I'm so glad you liked it!! I've been away for a bit, I caught a nasty virus after caring for my sick little girl,... so this made my day. :)
My DH takes the leftovers for lunch and mixes it with shredded cabbage, so it would definitely make a great salad. I've made this for 20 yrs now and I sometimes add avocado and tomatoes, they both go great with mint. But this simple version is perfect with BBQ or spicy meats. Thanks for trying it!
