Curried Chicken Salad

    Curried Chicken Salad by Rosej

    I found this recipe by using the ingredient search. I had some leftover chicken and wanted to make a chicken salad sandwich with apples and celery. This looked liked an interesting combo of ingredients!
    My Husband loved it far more than me. For me it's more because of the brand of curry powder I have than the recipe itself. So I'll have to make it again with a different brand of curry powder and compare!
    We had it as a 'scoop and share' with lettuce leaves and crackers for a light lunch. I didn't have any cashews or almonds so I used sunflower seeds for that crunch. But cashews would be great in this!
    My husband and I both thought it could use something, but couldn't put our finger on it. After some contemplation I think it could use a little zing, perhaps with some lemon juice or other acidity. Or maybe the zing from some cayenne pepper or hot sauce!
    I really liked all the ingredients in this and can see it tasting so much better if I had a different curry powder! (I think this brand had far too much fenugreek? Something in it has a weird aftertaste--it's also more orangey than the usual yellow coloured one that I like) But at least my DH still liked it! :)

    My husband would absolutely love this! Without the nuts as well though, he's not a fan, and replaced with sunflower seeds like you did :) He loves chicken salad with some sort of fruit in it. Funny, since he despises mayo lol :P I could see some lemon juice added to this, bet it would give it that pop it needs!

    Lovely picture! and nice find of a recipe. Bummer you didn't like your curry. I know nothing about curries. I like the idea of eating it on lettuce leaves with a couple crackers.

    Thanks Linda! When I think of curry, my mind always goes to garam masala and I forget about the yellow powder until I see it in a recipe! Curries are touchy as any mixed spice can vary from brand to brand. Making your own is probably best. I have all the ingredients to make my own yellow curry powder, minus the fenugreek! ;)
