I should say Elle's Grandmother's shortbread that she would make with her Mom every year! :)

Shortbread Like Mom Makes

~Made for December 2018 Cookie Swap~

I would classify this as a Sugar cookie and not a Shortbread. But it's still a delicious cookie!! It has a hint of lemon from the zest. And like Elle says, it really does taste better after it sits a couple of days. The lemon flavor becomes more pronounced, and the eggy taste goes away and becomes more buttery tasting--but not as rich as shortbread.
It's crisper and less crumbly than a shortbread, so perfect for frosting and decorating. I think using the juice form the zested lemon would be great for a lemon frosting or glaze.
It says it serves 60, but I only got 26 cookies. I used my 1.5" cookie scoop to measure the dough before rolling into balls.
A delicious "lighter" cookie to put out on your Cookie tray, perfect with a cup of tea or spiked coffee! ;)

Great photo, Cosmicmother! I would probably drizzle them with a glaze, too. Something about a tiny bit of icing on a sugar cookie makes them that much better. I agree the serving size is off. No way you get 60 - golf ball sized dough balls.

I was looking at other lemon cookies and lemon sugar cookies and most sugar cookies use double the sugar. But I found one recipe almost identical to this but they roll it in sugar before pressing and baking. Like a crinkle cookie I guess? It supposed to have a crusty, glistening appearance. I think that would be great for this cookie and I might have to try it. The kids polished off all these cookies and I never got a chance to frost any either, LOL! ;)
