Enchilada Casserole

    Enchilada Casserole by Chefmeow

    This is so flavorful and delicious, the whole family LOVED it!
    I followed all of the ingredients and amounts to the letter. But could only find the large sized corn tortillas. So I decided to make a "lasagna" instead of rolling the individual enchiladas. The sauce and meat layer was very flavourful. For the canned tomatoes I used Aylmer Accents petite cut stewed tomatoes with chili seasonings, so that might have helped add a little more flavor.
    I got about 4 or 5 layers and used 10 large tortillas (cutting the tortillas to fit and using the scraps to fill in the gaps). I followed similar directions, dipping the tortillas in sauce and layering with meat, cheese and sauce. Once I got to the top layer all I used was the last bit of sauce and cheese; I didn't bother adding the salsa as there was enough sauce to cover and I was at the top of the pan. I thought I'd serve it with the salsa after it baked, but I didn't think it needed it.
    I thought a lb of cheese would be way too much, but I did use it all and it was a perfect amount. I used the regular Jack cheese that was called for, and grated it myself. I'm glad I didn't go for jalapeno cheese as there was a bit of spice to the canned green chili's (I must have got a spicy one even though the can said mild! ;)
    We had two dinners out of this, for the 4 of us. It was nice to have leftovers finally!
    I will definitely make this recipe again, and I think I would prefer to layer it again also--since it was so much easier than rolling individual enchiladas!.I know this will be requested by the family and become a new favorite! :)

    Oh man, this looks SO GOOD Shona!!! I used to make something very similar to this but it was called "Burrito Pie" and it was made with flour tortillas. I totally am bookmarking this one :) :)

    Wonderful photo Shona! Recipe looks like it's got a ton of flavor. I love stuff like this but my DH doesn't, it just doesn't agree with him. Nice idea to layer it!

    Great photo, Cosmicmother! We love Mexican food! This looks really tasty. Layering it was a good idea. Much simpler that rolling and stacking each enchilada and you still get the same great taste.

    Thanks Linda! Is it the flavor he doesn't like or does it upset his system? I liked this as you make your own sauce and can adjust the seasonings if you wish-- I used the chili seasoned tomatoes but it does call for plain. :)
