    **December 2016 Cookie Swap**

    OMG! I loved these cookies! They reminded me of an old fashioned gingerbread cookie, but they’re soft inside. What I liked about them is that they puffed up and held their shape when baked. Wish I would have cut into gingerbread men. I used a mix of cinnamon. ginger and a pinch of cloves. The dough was very soft with the consistency of a drop cookie. I didn’t want to add more flour so I refrigerated overnight and they were firm by morning. I couldn’t find Crosby’s Fancy Molasses and had to go with what they had in the store, so maybe that’s the reason for the dough not being stiff. I shaped into balls, rolled in sugar, and patted to 1cm thick. I needed some color on the cookie tray so I drizzled with a glaze (powdered sugar, butter, and Kahlua) and sprinkled with green crystal sugar. Couldn’t wait to have one this morning with my morning coffee. Thank you, Eastcoaster! Another fabulous recipe!

    Yes, beautiful picture and I love your addition of Kahlua in the icing, I never would have thought of that! The green crystal sugar adds a nice pop of color :)
