Fresh Strawberry Muffins

    Made for the July "Strawberry" Theme Challenge
    Fresh Strawberry Muffins by Chef Meow

    These are great! From experience I knew these were going to be a biscuit type batter. I guess you can call these a "Scruffin" --a mix between a scone and muffin. These are perfect for breakfast, or a light snack. They are light and airy, and have just a touch of sugar in them. Because they had such little sugar I sprinkled some raw sugar on top with a hint of cinnamon. Next time I would add more cinnamon.
    I can also see jazzing these up more by adding some lemon zest to the batter, and a drizzle of lemon glaze would make them more dessert like. :)
    I used margarine instead of shortening (not a fan of shortening) And they only took 15 minutes to bake in my oven, so check on them early!
    And another tip, toss the strawberries into the flour mixture first before adding the liquids. The batter is very sticky and glutinous so it's very hard to fold the strawberries in afterwards.
    They are delicious!

    Missed this one too! I guess I didn't go back far enough after coming back from vacation. These looks SO GOOD, beautiful picture Shona! Good call with topping them with sugar and cinnamon, that's what I would have done :)
