Fresh Strawberry Muffins Recipe
These are very light and refreshing. I always triple the batch since everyone likes them so much. Enjoy.

Ingredients
  • 2 cups sifted flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 egg well beaten
  • 1 cup milk
  • 4 tablespoons shortening melted
  • 1/2 cup sliced strawberries

Directions
  1. Stir dry ingredients together.
  2. Add milk, egg and shortening.
  3. Gently stir in strawberries.
  4. Bake in well greased muffin pan for 20 minutes at 400.

These muffins sound great! Could I substitute frozen strawberries? I also don't have shortening on hand. Is there something else I can use like butter?


I made these tonight (while waiting for the pasta salad of yours) and they were great. My 3-year-old helped make them and begged to have them immediately (instead of waiting for breakfast), so I decided to have it for dessert. I put some melted white chocolate and chocolate on top and it was great. Without the chocolate, it was still superb. Thanks for sharing!!

Oh, we enjoyed these! They're like a light biscuit. Next time I'll make them with cheese eggs and patty sausage.
