Fresh Strawberry Muffins

These are very light and refreshing. I always triple the batch since everyone likes them so much. Enjoy.

Ingredients

2 cups sifted flour shopping list
4 teaspoons baking powder shopping list
1/2 teaspoon salt shopping list
2 tablespoons sugar shopping list
1 egg well beaten shopping list
1 cup milk shopping list
4 tablespoons shortening melted shopping list
1/2 cup sliced strawberries shopping list

How to make it

Stir dry ingredients together.
Add milk, egg and shortening.
Gently stir in strawberries.
Bake in well greased muffin pan for 20 minutes at 400.

These are a light tasty muffin! Very much a biscuit type batter. Mine baked for only 15 minutes at 400F. They could use a little something special, so I brushed the tops with butter and sprinkled some cinnamon sugar on top; Since it has very little sugar anyways! I will make again! I made these tonight (while waiting for the pasta salad of yours) and they were great. My 3-year-old helped make them and begged to have them immediately (instead of waiting for breakfast), so I decided to have it for dessert. I put some melted white chocolate and chocolate on top and it was great. Without the chocolate, it was still superb. Thanks for sharing!!

These muffins sound great! Could I substitute frozen strawberries? I also don't have shortening on hand. Is there something else I can use like butter?
