    ***September 2018 Apple Recipe Challenge***

    Where to start with this recipe? Wanted to love it. The sauce is to die for. Too many other things I didn’t like. First, I was disappointed the pork chops did not brown at all. Left an unappetizing looking chop. Should have fried them. Second, the cook time says to bake one hour. I checked the chops at 30 minutes and the internal temp was 175 degrees. More than done! Can’t imagine what would have happened to these poor chops had I left them in for an hour.

    Let’s talk flavor. The sauce is to die for! I couldn’t get it to turn dark brown as stated in the recipe, but I was able to get it to a golden nutty color. It tasted fabulous so I left it at that. (Reduction sauces are not my forte.) With the filling, I only used a good sprinkle of thyme. Thyme is one of those herbs I find overpowering. I couldn’t bring myself to add a whole tablespoon of dried thyme to a cup of apples. With Gorgonzola in both the filling and the sauce, we found the Gorgonzola overpowering and salty. It was so strong that you couldn’t taste the pork or the apples. Personally, I would omit the Gorgonzola from the filling. I didn’t mind these because I adored the sauce. Hubby didn’t like them at all and he likes Gorgonzola. Too much work for a mediocre result.

    That's too bad the gorgonzola was overpowering. But at least the sauce was great!
    Like you suggested, I can see this working better with pan fried chops, no stuffing, and cooking the chops with the sauce on the stovetop. :)

    I agree the cook time is long DIZ. Also, Gorgonzola can definitely be overpowering, especially when using too much! I can see why this recipe didn't work out for you :( Glad you liked the sauce though, and your picture looks great!
