Grilled Polenta & Peppers With Cherry Tomatoes

    *Made for the April 2019 "3 P's" Recipe Challenge- Peppers*

    I thought this sounded like a fun recipe to try as a side to our dinner one night! I had a package of actual "polenta" and the measurements were different in cooking it as in Joce's directions using cornmeal. It said to use 2 cups polenta to 3 3/4 cup of water, so I followed it, but halved it as it sounded like it was going to make a lot! After cooking and adding the ingredients in the pot, I chose to spread it into a smaller dish to make it a little thicker since I had never grilled polenta and was nervous about it breaking when I flipped lol. Worked beautifully and the tomato and grilled pepper herb salad on top was the perfect pair! Chose to use feta on top. I could definitely just eat this for a light lunch :) Thanks Joce!

    I've never been a fan of polenta but I like the idea of grilling it, and the salad with feta cheese makes it oh-so tempting!! I may just have to try it! :D

    Thank you!!! I'm sort of new to polenta, especially cooking it. Had it at a new restaurant about 6 months ago and fell in love :). Basically just grits though lol.

    Lovely photo Michelle.When I read that you spread it onto a plate to make it a bit thicker because that is what I do. My mom would pour it into a pie plate to cool, works great.
    I love polenta and this looks like a great recipe.Grilled is great but I also like to fry it.
