    Hawaiian Tea Bread by Peetabear

    This was devoured last night, and loved by all! Absolutely delicious!
    My hubby doesn't care for coconut, and after seeing the coconut flakes in the bread he didn't think he would like it. But he loved it too!
    I sometimes find in tropical recipes like this that the banana flavour can quickly dominate. But the balance of banana, coconut and pineapple is spot on! No one flavour dominated the other and they worked perfectly together.
    It baked up beautifully with a golden crust and lightly textured crumb. I could see upping the tropical flavour with some rum extract or lime zest, but it's wonderful as-is! I know this recipe will be requested often!

    Very nice photos, Cosmicmother! The bread looks so yummy! I'll bet it's moist with all of the pineapple and bananas. Hope your snow melts soon! We've had an unusually cold Spring and it looks to stay that way for the next few weeks. Not going to have much of a garden this year if the weather doesn't change.

    Thanks DIz! Most of it melted yesterday but it might be a mix of rain and snow tonight. At least we're getting moisture, April was super dry--so the grain Farmers are happy and hopefully this will dampen some of the expected wild fires this year. Hopefully the weather changes for you soon so you can get your garden going! I'm waiting until Victoria Day to plant, May 20th. :)

    Thanks Michelle! I found it very moist and buttery tasting because of the butter in the loaf so we had it plain. I didn't think it needed a glaze or anything. :)
