    Hoisin Pork Tenderloin

    I had to change a couple things. If Keni was here, I would of ran this by her before changing anything and I'm sure she would have said "go for it!"
    I'm not a fan of cumin on Pork, so I used powdered ginger in it's place. I contemplated dividing the marinade in half and using the cumin on one tenderloin. But I didn't want to risk ruining it for my tastes so I just subbed the whole thing. It was only a teaspoon.

    I decided to use the oven instead of grilling. I cooked it at 400F for 25-30 minutes, until they were 145F internally.
    I didn't want to waste the delicious marinade so I boiled it on the stove for 15-20 minutes and let it reduce by half. I served it over sesame rice and drizzled the cooked marinade over top.

    I didn't use too much hot sauce, so it wasn't that spicy. You could smell the mustard, but not really taste it. My hoisin sauce was rather sweet as well so that compensated for the spice. Next time I might add some chili flakes to it. I marinated it for about 8 hours, but I think overnight would have been better.
    I'm sure grilling it would give it a different flavor. I could see reducing the marinade and using it as a glaze for grilling as well :)

    I wish I did try half with the cumin! The last two times I had pork with cumin I had to toss it out. :( I love Indian and Mexican food and cumin on chicken and beef. But on pork it gives it a weird taste to me? I will have to get over my phobia and try it in this recipe next time! ;)

    Haha, I thought the same thing about Onionator's review, I think *he* was joking ;)
    If Keni was still here we could of ran ideas past each other and come up with a whole new recipe I am sure! I can remember lot's of food talk on AR with her. We ran ideas back and forth and came up with a new idea for my cookie recipe, she used pine-nuts and white chocolate chips in lieu of the cranberries and dark chocolate. She was so fun to talk to, miss her!
