  *Made for the April 2018 Egg Recipe Challenge*
  
  We had this for dinner tonight! I typed "ham" and "eggs" into the ingredient search bar and found this delicious recipe :) I was skeptical of ham and salsa together lol, but it was really good. I sauteed the cubed ham for a few minutes until crisped up some, then added in the black beans (which I drained and rinsed) along with the cilantro. Cooked my eggs over easy and used sharp cheddar on top. Very yummy!!!

  Something tells me that you will be contributing a lot more than just one "Egg" recipe for April's Challenge knowing your penchant for them Michelle. :) The Huevos look very yummy. Jim and Benjamin would really like that. I'm not a fan of black beans. :)

  The ham and salsa reminds me of an egg bake I use to make all the time when I first got married, called Picante Potato Pie. You use cubed hash-browns, mixed with ham, salsa, eggs, cheese and bake. I haven't thought of that in years! ( I should post it! ;)

  Yeah, for some reason I was worried about the ham and salsa together lol, probably because it was baked with a glaze, but I just cubed up the middle pieces and stayed away from the glazed part :P
