Hungarian Style Goulash

    Made for the November 2017 Soup and Stew Challenge!
    Hungarian Style Goulash/ by DonSpain

    My Dad use to make goulash on a regular rotation and I don't know why I haven't made it at home in so long?! Going through other recipes here, most add potatoes and serve it over egg noodles or spaetzle. But we always had it with rice at home and no potatoes. So when I saw this recipe I knew I had to make it!
    I didn't have the Spanish/Smoked paprika so I used mild Hungarian/Sweet paprika. But I did use smoky bacon instead of pancetta, so I hope the two cancels each other out! Since I used bacon I did a slightly different method than called for in the beginning of the recipe. I sautéed the bacon first and took it out with a slotted spoon than browned the meat in the bacon fat instead of the other fat called for in the recipe. Then followed the recipe from there. I added the bacon back in at the end with the sour cream.
    A fantastic recipe that the whole family loved!

    Oh Yum your photo looks very tasty:) I sub bacon often for pancetta as pancetta is expensive. I buy t on sale when possible cause i do like it, but good bacon works just as well.The photo is very nice Shona...

    Yes, it's like a stew Michelle, but brighter tasting. This recipe is a little lighter than some other goulash's too as this doesn't have tomato paste and uses fresh tomatoes. So I found it more refreshing. You could easily leave out the sour cream and whom ever wants it creamy can just add it to their bowl.
    My Dad would use the Hot Hungarian paprika, which made it super spicy! But the sweet is very mild tasting, so I added cayenne to my bowl! ;)

    I like that it uses fresh tomatoes over tomato paste. I can sneak the sour cream in and I don't think anyone would notice :P
