Made for January's 2018 "Pasta and Rice" Challenge
    Inside Out Ravioli
    by ChefMeow

When I first saw the recipe I thought 6oz of pasta didn't sound right. So I did a google search and found many similar recipes with the same amounts of sauce and they all used 16oz of pasta. So that's what I used. I'm sure it was just a misprint.
I didn't have dried parsley so I used an Italian herb blend instead. And just chopped some fresh baby spinach instead of using the frozen kind. Everything else I followed to the letter.
I was skeptical about the eggs, bread crumbs and cheeses in the pasta but it was so good! I think next time I would use a creamy cheese like ricotta, or even just mozzarella or provolone. Once I mixed the pasta up it was rather dry, after reading the other recipes online most added a 1/4 cup of olive oil to the pasta, so I quickly drizzled some in before adding it to the pan and it was much more silky and creamy.
After adding the pasta and layering the sauce on top the recipe says to sprinkle with parmesan and bake. It didn't say to cover the pan so I didn't. I felt the sauce dried up a little too much on the top but it was still very tasty! I think I would use a nice melty cheese on top instead or just cover it with foil next time so it stays moist.
With a couple tweaks this is a fantastic recipe! I know for sure I'll make this again, and probably in lieu of lasagne! :D

Dark night again for my camera! As you can see in the second pic it's not a nice looking pasta dish. But it's delicious! ;)

I think it looks great Shona and it cut nicely! Good job at all of your researching to make this recipe work for you. I agree, I think they meant to put 16oz pasta in the recipe. Good find and looks like you'll have some leftovers too :)
