How to make it

  • Brown ground beef, garlic and onion in a large skillet then drain off excess fat.
  • Add tomato sauce, tomato paste, parsley, oregano, salt and pepper then simmer 10 minutes.
  • Cook pasta according to package directions until just softened but not quite done.
  • Drain and rinse with cold water then put back into pan in which it was cooked.
  • Add cooked spinach, cheddar cheese, bread crumbs, eggs and parmesan.
  • Spread mixture into greased rectangular baking pan then top with meat mixture.
  • Sprinkle more parmesan on top then bake at 350 for 30 minutes.

    **NOTE** The recipe has a misprint, it should read 16 ounces of pasta, not 6 ounces!
    After researching the recipe online there are many with these same ingredients and they all used 16 ounces. Also they added 1/4 cup olive oil to the pasta when mixing in the egg, cheeses and bread crumbs. I wasn't going to at first but it was dry and need the extra oil.
    **So use 16 ounces of pasta and add 1/4 cup olive oil to the pasta before baking!

    Delicious! I was skeptical about the eggs and bread crumbs mixed with the pasta but it was delicious and my kids loved it too! I didn't have dried parsley so I used dried Italian herbs instead, and fresh baby spinach that I chopped. I think this would be great with other cheeses like mozza, provolone and even ricotta mixed into the pasta for extra creaminess. I will definitely make it again and play around with different cheeses!
