Irish Apple Cake

    Made for the March 2018 "Irish Theme" recipe challenge!

    Irish Apple Cake by Homecooking

    This is delicious!! It was so super quick and easy to pull together. I had the whole cake finished (including peeling and chopping the apples) well before the oven preheated!
    It comes together like a scone or biscuit recipe. I thought it would be dry like a biscuit, but it wasn't. The apples kept it moist and the texture is more like a muffin or coffeecake. In fact, it reminds me of a cobbler topping especially with the sugar sprinkled on top.
    In Ireland they use cloves and nutmeg like we use cinnamon. But I didn't want to use too much clove, so I just used an 1/8 of tsp. I also added an 1/8 tsp of nutmeg, just to balance the cloves. But if you don't like cloves I'm sure cinnamon would be great, or any mixed spice like pumpkin or apple pie spice!
    The baking temp and time was spot on, I baked it for 35 minutes. It is lightly crisp around the edges. It was great served warm with whipped cream, but I bet ice cream would have been better! I had it plain for breakfast this morning and it was perfect!

    The only reason this doesn't get 5 stars is because the ingredient list and directions could have been a little easier to follow. This recipe gives you approx. measurements on sugar and milk-- I used 1/4 cup milk, and only 1/2 cup of sugar as I used sweet apples. I also used all-purpose flour and added 2 tsp's of baking powder instead of self-rising flour.
    I used these Cup measurements:
    2 cups Flour or Self Raising flour--( add 2 tsp baking powder if using AP flour)
    1/2 tsp cloves (I used an 1/8 plus 1/8 tsp nutmeg)
    1/2 tsp salt
    1/2 cup of butter, cold and cubed.
    3-4 apples, peeled and thinly sliced
    1/2-3/4 cup of sugar
    2 eggs
    1/4 cup milk, approx--just enough to bring the dough together
    Sugar to sprinkle on top of the cake

    I also think this would be great with other fruit! I'm definitely going to make it when blueberry and peach season comes around! Because it's so simple I could whip this up without even looking at the recipe again. It's a keeper!! :D

    It looks fantastic, Shona! Did you use the butter at room temperature? I was surprised in the directions it said to rub the butter into the flour. don't you usually do that with cold butter? I have to try this for sure. As you say it would be great with peaches I bet!

    I used semi-cold butter. (vegan butter)
    I didn't notice it said room temp butter until I wrote the review! When it's semi-cold I find it easier to rub the butter into the flour. :)

I was wanting to make an Irish dessert for this month, but it's been so crazy around here that I just didn't get the chance :( Good call on cutting down on the cloves, lol, I would too, I've learned my lesson :P The topping does look biscuit-y, glad to hear it wasn't dry and more like coffee cake, which I LOVE! MMMmmmm...peaches would probably work so well in this recipe :)

    Ooooo. This was one of my saved recipes that I just haven't gotten around to making. I'm so happy to see you did and what great photos. Now I really have to make this! I'm making wheat soda bread now but I really need to get apples and make this. It would be so good for breakfast with coffee.

    Yes, it's very good with coffee in the morning Linda! I was thinking a streusel topping would be nice too, maybe an oat one or almonds would be nice. Make it a little more hearty for breakfast :)
