Irish Nachos

    For this month's "Irish Recipe Challenge" I thought it'd be fun to try this recipe for
    Irish Tacos/saved
    except that I decided to do 'nachos' as opposed to 'tacos'.
    There's lots of flavour here. I cubed some sliced corned beef and sprinkled that on top of the nachos first. I wrung out the sauerkraut so it wouldn't make the nacho chips soggy and then I topped that with the horseradish sauce. I tasted the horseradish sauce first as I've never had it before and it packs a punch so I applied that sparingly, sort of a drop per nacho. Grated swiss cheese over top all of it and broiled until the cheese was melty.
    They were quite yummy and very fun. Even a "Irish Quesadilla" would be good with these ingredients. "Luck of the Irish to ya".

    How fun! My son would love these. He would probably even try it with 1000 Island dressing to make it a "rueben" nachos. Great pics!
