Irish Stew

    Made for the March 2018 "Irish Themed" recipe challenge!

    This is a rich and hearty stew, a great basic stew.
    I followed the ingredient amounts perfectly and it was spot on. The poster said to sub beef for lamb if you want, and that's what I did. So I also used beef broth instead of chicken and left out the parsley. To make up for any flavor the parsley gave I added 2 bay leaves. I followed the directions to a T as well, and it turned out great.
    Next time I might add some garlic, and maybe something to contrast the richness a little. Like some tomato paste or a splash of balsamic. If the kids weren't eating it, some Guinness added or some red wine would have been great too!!
    It was very filling! I usually don't add that many carrots or potatoes to stew but I liked the extra veggies, bulks it up and makes it last longer!
    I served it with soda bread which was perfect to soak up the "gravy".

    We had plenty of leftovers too, so for a family of four this would last two whole meals plus a couple bowls for lunch! :)
