Ingredients

How to make it

  • Combine the lamb, parsley, thyme, salt, pepper, and 3 cups broth in a large saucepan and simmer covered over moderate heat for 90 minutes.
  • Add the potatoes, onion, carrots, celery, and remaining broth and simmer, covered, 1 hour.
  • In a small bowl whisk together the flour and oil until smooth and stir into simmering stew until mixed well.
  • Simmer uncovered 3 to 5 minutes, until thickened.
  • Serve with Irish Soda Bread, a green salad and Guinness!

    I followed all the ingredient amounts perfectly, and I think it's spot on! The only thing I didn't use was parsley (not a fan) so I put two bay leaves in the stew instead. Since I used beef instead of lamb I also used beef broth instead of chicken. This is a very good basic stew with lot's of flavor from the meat and vegetables and is very filling! It could use a little more flavor or acidity for contrast. Perhaps some garlic, a glug of wine, Guinness, tomato paste or balsamic would perk it up a little; but on it's own it was still rich and delicious. It paired perfectly with soda bread.

    I love stew and the flavors here sound scrumptious. Thanks for the great post. I'll have to use another meat because lamb it very costly. This is going to be very handy as the weather turns colder. yum, yumm...:)

    I'm all over this....I love Irish Stew and lamb. It's like a big bowl of delicious comfort. Yep, Irish Soda Bread and Guinness are must haves. It's that time of the year when I start making a big ol' pots of stews, chilis and soups and inviting the gang over. I loooOOOooove autumn and autumn-y/winter-y foods. Thanks, Kath hon! :) Vickie
