  **July 2018 Recipe Challenge---Sandwiches**
  
  I like how this recipe emphasized that it was created out of what was on hand. I pretty much followed the recipe, but added a few chopped green peppers. The omelette was very good. The fresh tomato and mayo made for an interesting twist. It’s just a little out of my comfort zone for this type of sandwich. Just the same, I was happy to use up some tomatoes. Used an heirloom tomato from the garden.

  Love the photo! The recipe would be great too for a breakfast for dinner meal in the summer when it's too hot to cook but you still need to eat something substantial.
