Lemon Garlic Asparagus With Goat Cheese

I made these on top of the stove, too cold out to grill. I sautéed them for about 10 minutes in a little water. Drained, drizzled with olive oil, sprinkle with sea salt, a sprinkling of paprika, very few red pepper flakes (I’m a wimp) and the lemon juice. I used lactose-free Old Cheddar Cheese, grated over the asparagus. (ran out of goat cheese)The cheese melted over the asparagus very nicely. I thought I would have to put it in the oven for the cheese to melt but there was no need. Absolutely lovely dish and will make it again.

Thank you Shona, I found that cheese the other day at Sobey’s, so of course I had to try it. It’s pretty good.

Glad to hear another cheese worked for you Manella! I'm not a goat cheese fan, so I'm thinking I would sub either parmesan or even feta? Love the pic.!
