Main-Dish Picnic Biscuits

    *Made for the June 2017 "Picnic" Recipe Challenge*

    I made these in hopes that they will freeze well for quick grab, heat and go breakfasts. I had one right out of the oven and they are pretty good! I sifted the flour and baking powder together and ended up using a little less than 3/4 cup of the milk to get the consistency I was looking for. I rolled out the dough, folded it over twice on itself and rolled out again to try and get a nice flaky rise. They rose pretty well. I think my only critique would be that it could have used a pinch of salt, even with the ham and cheese. I did go a little less on the ham, I think. My package didn't have the weight on it and my food scales batteries were out, so I had to eyeball and it's kind of hard to eyeball 1/2 pound lol. I did use more cheese than called for though, more like 1 1/4 cup. I froze half and put the rest in the fridge. Will make again with that little pinch of salt :)

    Well they certainly look yummy and I would totally warm one up, split it and put a fried egg inside for a yummy breakfast sandwich. Nice photo Michelle!
