Marinated Vegetable Quinoa Salad

    *Made for the October 2020 " Cucurbit" Recipe Challenge*

    This recipe reminds me of a deconstructed version of the stuffed zucchini recipe I made last week, so I just had to try it! For the fresh herbs I used basil and thyme. I personally would double up on the zucchini and mushrooms or halve the quinoa because the ratio seemed off to me. Making the full recipe makes a TON so I also think the servings are off. Great flavor and glad I have this in the fridge for quick lunches :)

    Great photo Michelle! I like that the zucchini and mushrooms are marinated in the dressing, and the dressing sounds delish! I wonder if the recipe was suppose to be 1 cup of quinoa to 2 cups water? Rather than 2 to 2?....I rarely make quinoa so I am unsure of ratios. :P

    Thanks ladies! I think the recipe is right Shona because it calls for 2 cups quinoa + 2cups of water + 2 cups of broth which was spot on for my quinoa to get tender. But it may just be a preference for the veggie ratio, but I honestly just don't know how this feeds four? Imo, easily 8!
