How to make it

  • Put quinoa, water and vegetable stock in pot, bring to a boil, salt water, cover and reduce heat to low. Quinoa shoudl be done in 15 mins. Remove from pot and chill in cooler
  • Combine garlic,lemon juice and balsamic, while whisking add olive oil in a slow steady stream. when all in in and emulsified and honey salt and pepper. In a steel bowl toss the diced zucchini and mushrooms with the marinade. add herbs. chill for 30 mins or overnight. add quinoa, toss and serve!
