This is really good! I found an almost identical recipe on another site that gave specific measurements. I used those because they were easier to measure and used more. More would be good, right? Not so. It was too rich. Midgelet has the measurements just right by using 3 Tbsp. of each ingredient. I topped the casserole with extra cheese, bacon, and green onions. You would never know this was cauliflower and not mashed potatoes.

I've never tried mashed cauliflower but I love cauliflower soup! I'll have to try this out on the family and see if I can trick them that it's potatoes! ;)

The photo looks wonderfully yummy DIZ! I too love cauliflower and will try this recipe soon. The real test will be to see if I can pass them off as mashed potatoes with DH. I've had mashed cauliflower as a side at restaurants and know it is really good (if made right).
