    Mediterranean Lentil Salad
    Recipe made for IMI2 Group May 2020 "Picture-less" recipe challenge.

    My review: I cooked the lentils only with the bay leaf and kept the rest of the ingredients raw, just my preference. Love the fresh lemon juice and olive oil dressing and crunch of the raw veggies. The leftovers held up well in the refrigerator too.
