Mediterranean Lentil Salad

- 1 cup dry brown lentils shopping list
- 1 cup diced carrots shopping list
- 1 cup red onion, diced shopping list
- 2 cloves garlic, minced shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon dried thyme ( a bit of fresh is even better ) shopping list
- 2 tablespoons lemon juice shopping list
- 1/2 cup diced celery shopping list
- 1/4 cup chopped parsley shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1/4 cup olive oil , I use extra virgin shopping list
How to make it
- In a saucepan combine lentils, carrots, onion, garlic, bay leaf, and thyme.
- Add enough water to cover by 1 inch.
- Bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but not mushy.
- Drain lentils and vegetables and remove bay leaf.
- Add olive oil, lemon juice, celery, parsley, salt and pepper.
- Toss to mix and serve at room temperature.

I cooked the lentils only with the bay leaf and kept the rest of the ingredients raw, just my preference. Love the fresh lemon juice and olive oil dressing and crunch of the raw veggies. The leftovers held up well in the refrigerator too.
