Oatmeal Butterscotch Cookies

    From Krumkake: Oatmeal Butterscotch Cookies

    I made these as a thank you for a neighbor for a kindness done and they are delicious! I did make a few changes, but nothing drastic: I used bread flour to keep the cookies from flattening out too much in my temperamental oven; reduced the sugar to 1-1/2 C.; used 2 tsps. Penzeys double strength vanilla, and baked them at 350 degrees - yum!

    Cosmicmom, I've only ever had oatmeal butterscotch cookies once. That was years ago and they were sickeningly sweet. My neighbor has a *huge* sweet tooth, so I was looking for something he'd like and, after checking out several recipes here and on other sites, including the one on the butterscotch chips bag, decided on Krumkake's version. I'm so glad I chose hers - yum!

    Linda, I got the idea of reducing the sugar from you saying you do that in most recipes and it works well :) We thought the cookies were plenty sweet for our taste, but can see adding the full amount if you want them sweeter.

    Cheryl, I've been tasting them ever since my husband and I tried a few as a sample.
    Strictly for quality control, ya know ;) They made me want to buy more chips and make a batch for us.
