Ingredients
  • 1 cup butter, softened
  • 2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 2 cups quick cooking oatmeal
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 (12 ounce) bag butterscotch chips

Directions
  1. Cream together butter and sugar; beat in eggs and vanilla.
  2. Stir in remaining ingredients, stirring in chips lastly.
  3. Drop by spoonfuls onto greased cookie sheets.
  4. Bake at 325 degrees for 12 to 14 minutes, until very lightly browned around edges.
  5. NOTE: I prefer these slightly underbaked so they come out soft and gooey - if you like them crispier, you may want to adjust the cooking time.
  6. Cool on waxed paper before storing in a covered container.
  7. NOTE: Sometimes I go a little crazy and add chocolate chips, too, and maybe some toffee bits, but my favorite still remains all butterscotch chips.

My wife doesn't like sweet food much at all. We go to a candy store, and it's like I took her to "Blah'r'us" or something. She absolutely LOVES these cookies! I made them for her yesterday, and I was somewhat skeptical when I read "2 c brown sugar" with no white sugar... so skeptical that I almost did 1/2 and 1/2... but I kept to the recipe, and we absolutely adore them. This one's going in my recipe box! Thanks so much!
