How to make it

  • Cream together butter and sugar; beat in eggs and vanilla.
  • Stir in remaining ingredients, stirring in chips lastly.
  • Drop by spoonfuls onto greased cookie sheets.
  • Bake at 325 degrees for 12 to 14 minutes, until very lightly browned around edges.
  • NOTE: I prefer these slightly underbaked so they come out soft and gooey - if you like them crispier, you may want to adjust the cooking time.
  • Cool on waxed paper before storing in a covered container.
  • NOTE: Sometimes I go a little crazy and add chocolate chips, too, and maybe some toffee bits, but my favorite still remains all butterscotch chips.

    I'd never made oatmeal butterscotch cookies and couldn't resist trying these that I made as a thank you for a neighbor. They are super yummy and I hope he likes them as much as my husband and I enjoyed our samples. I made a few changes, but nothing that drastically changed the cookies. For starters, I used bread flour to keep the cookies from flattening out too much in my wonky oven; reduced the sugar to 1-1/2 C. (which was plenty sweet); used 2 tsps. of Penzeys double strength vanilla for a richer flavor; and baked them at 350 degrees for 10 minutes, until the the edges were very lightly browned and the centers were still slightly soft, to get the chewy cookies we like best. This was my first time making this cookie, and the recipe is going into my tried and true file to make again and again. Thank you, Krumkake, for sharing your recipe!     My wife doesn't like sweet food much at all. We go to a candy store, and it's like I took her to "Blah'r'us" or something. She absolutely LOVES these cookies! I made them for her yesterday, and I was somewhat skeptical when I read "2 c brown sugar" with no white sugar... so skeptical that I almost did 1/2 and 1/2... but I kept to the recipe, and we absolutely adore them. This one's going in my recipe box! Thanks so much!
