Oven Fried Chili Chicken

    Another fantastic recipe by Pat! Awhile back I had purchased some chipotle powder but couldn't remember why. I looked for recipes here using the ingredient search, and found this Oven Fried Chili Chicken recipe using bone-in, skin-on thighs. It looked simple enough! I first made this a few weeks ago. It smells sooooo good while baking that no one could resist eating it so I never got a picture. I thought it might happen again, and I'm surprised neighbors, dogs and other animals weren't begging at the door for a bite, lol! It smells that good! I made sure to make it early before anyone got ravenously hungry. ;)

    Perfectly crispy and juicy, the baking time and temp was spot on. I barely wasted a crumb of topping or any of the dipping milk/cream, so that was spot on too. Pat said 2-3 tsp's of chipotle powder, I used 2 and it was plenty spicy for me. I'm sure a mild chili powder would be great too if you don't like spicy food. But even my daughter liked it and she's not one fore spice at all. It has a warming spice not a burning spice.
    I didn't have garlic salt so I used 1/2 tsp of garlic powder and 1/4 tsp of sea salt to make up for the 3/4 tsp of garlic salt. I didn't have evaporated milk so I used half and half coffee cream. I think using a flour dredge and egg dip would also be great, but I like the simplicity of the milk/cream dip. And it made for a light, crisp topping.
    One tip I have when using a crumb coating like this is to drizzle a little bit of oil into the coating and mix with a fork, it makes sure that you get an even crispy coating. I used Olive oil, and barely a tsp to my guesstimation. Just enough to coat the crumbs but not make it soggy.
    We have eaten this hot, and at room temperature, both great. First time I served it with Spanish rice and corn, second time with potato wedges (with cumin/chili/garlic similar to the chicken spices) and a garden salad.
    This has definitely become a family favorite!
