How to make it

  • In pie dish,whisk together the corn flake crumbs,chili powder,cumin and garlic salt. Pour evaporated milk into second pie plate.
  • Dip a piece of chicken into the milk and shake off excess.Roll around in corn flake crumbs till completely coated. Shake off excess. Place on prepared baking sheet. Repeat with remaining chicken.
  • Bake chicken at 375 for 50 to 55 mins or till golden and crispy and internal temp. is 160.
  • May be served warm or room temperature.

    This is awesome!!
    Instead of evaporated milk I use half&half coffee cream. And used 1/2 tsp garlic powder and 1/4 tsp salt for the garlic salt called for.
    I think coating the chicken in flour, than an egg dip would also work. But I liked the simplicity of the milk/cream. All the amounts called for were spot on. I used 4lbs of chicken thighs, they were large and worked out to be 10 thighs.
    I served it with Spanish rice and corn. The whole family loved it, and I know they will request it again. Looking forward to it!

    This sounds very tasty, and not long and drawn out. I will give it a try. It's combining 2 of my favorite foods the taste of chili and fried chicken!
